Cajun Macaroni and Cheese

Cajun Macaroni and Cheese: Savory Sweet and Satisfying

What a delicious version of mac and cheese. There is the perfect amount of sauce that has just the right amount of spice to it and the andouille sausage just adds to the whole deliciousness of the dish. I have already made this dish several times and I know I will be making it again.

Cajun Macaroni and Cheese

Ingredients:

  • 12 ounces veggie pasta
  • 2 tablespoons olive oil
  • 6 ounces andouille sausage, diced
  • 2 bunches green onions, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon cajun seasoning, store bought or homemade
  • 2 tablespoons all purpose flour
  • 2 cups fat free milk
  • 8 ounces sharp cheddar cheese, shredded

Directions:

  1. Cook pasta according to directions, but cooking for 1 minute less than package directions. Drain pasta, and save 1 cup of the pasta water.
  2. In a large skillet heat olive oil over medium high heat. Add in the sausage and cook until it begins to brown.
  3. Add in the onions and pepper and cook for another 3 minutes.
  4. Add in the cajun seasoning and flour, stirring and cooking for another 2 minutes.
  5. Gradually stir in the milk and cook until the sauce thickens stirring the entire time, about 5 minutes.
  6. Add the cheese to the sauce stirring until melted.
  7. Add the cooked pasta and sausage to the sauce stirring to combine.
  8. Add pasta water to thin out the sauce, if desired.
  9. Reduce heat to medium low and cook for 1 minute.
