These pancakes were so delicious. The pancakes themselves had a wonderful texture and flavor. The fresh strawberries and strawberry sauce only added to the already delicious pancakes.
This recipe makes about 8 pancakes. So if your family is big pancake eaters, I would suggest doubling the entire recipe. My husband and youngest daughter was happy with two pancakes, but my oldest daughter and myself could of eaten more.
Strawberry Lemon Ricotta Pancakes with Strawberry Sauce
Ingredients:
- 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground nutmeg
- 2 eggs, slightly beaten
- 1 cup ricotta cheese
- 1/2 cup fat free milk
- 1 tablespoon granulated sugar
- 1 lemon, zested
- 1 teaspoon fresh lemon juice
- 1 cup strawberries, diced
- 1/2 cup granulated sugar
- 1/8 teaspoon fresh lemon juice
- 2 strawberries, sliced
Directions:
- In a large bowl combine the flour, baking powder and nutmeg.
- In a medium bowl combine the eggs, ricotta, milk, sugar, lemon zest and lemon juice.
- Pour the wet ingredients into the dry and stir until just combined.
- Heat the griddle over medium heat and lightly grease.
- Pour 1/3 cup of batter onto the preheated and greased griddle. Cook until pancake is bubbly. Flip and cook until pancake is golden.
- In a food processor or blender, process the strawberries until smooth.
- Pour the strawberries through a sieve to remove the seeds.
- In a small saucepan combine the strawberry puree, sugar and lemon juice.
- Cook over low heat until the sugar dissolves.
- Bring the mixture to a boil, reduce heat and simmer for 5 minutes, stirring occasionally.
- Remove from heat and cool.
- Top pancakes with sliced strawberries and strawberry sauce.
