Strawberries and Cream Coffee Cake with Vanilla Cream Cheese Glaze

There are only two things I can say about this coffee cake. One, it is beyond delicious and two it is easy to make. So go and make this now, you will not be disappointed!

The cake is nice and moist and filled with delicious sweet strawberries in every bite. The cream cheese glaze on top is just the perfect addition. What a sweet and tasty way to start the day.

Strawberries and Cream Coffee Cake with Vanilla Cream Cheese Glaze

Ingredients:

Strawberries and Cream Coffee Cake

  • 1 egg
  • 1 cup granulated sugar
  • 1 cup all purpose flour
  • 1/2 cup light sour cream
  • 1/4 cup buttermilk
  • 1/4 cup canola oil
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups fresh strawberries, cut in half
  • 2 tablespoons granulated sugar
  • Vanilla Cream Cheese Glaze

    • 3 ounces reduced fat cream cheese
    • 1/3 cup granulated sugar
    • 2 tablespoons unsalted butter, softened
    • 1 teaspoon vanilla extract

    Directions:

    1. Preheat oven to 400°F. Grease and flour a 9 inch springform pan.
    2. In the bowl of a stand mixer, with paddle attachment, add in the egg, sugar, flour, sour cream, buttermilk, oil, vanilla extract, baking powder, and baking soda. Mix on medium high speed until smooth and combined, about 2 minutes.
    3. Scrape down the sides of the bowl and mix for an additional 1 minute.
    4. Transfer to prepared pan and arrange strawberries on top of batter evenly.
    5. Sprinkle with 2 tablespoons granulated sugar.
    6. Bake for 20 minutes.
    7. Lower oven temperature to 375°F and bake for an additional 10 minutes or until the cake is golden and an inserted toothpick comes out clean.
    8. Cool cake in pan on a wire rack for about 10 minutes.
    9. Remove from pan and cool completely on wire rack.
    10. While the cake is cooling make the glaze by combining the cream cheese, sugar, butter and vanilla extract.
    11. Spread the glaze over the entire cake once the cake is completely cool.
