Quinoa Salad with Mango, Raisins and Almonds

When I first saw this salad on Pinterest I had high hopes for it. It was an interesting salad with many different textures and flavors. Plus I have been on the hunt for quinoa recipes.

This salad did not disappoint! You have quinoa mix with sweet juicy mango, chewy raisins, and crunchy almonds all topped with a fresh orange dressing. What a refreshing and great tasting salad!

Quinoa Salad with Mango, Raisins and Almonds

Ingredients:

Quinoa Salad

  • 1 cup quinoa
  • 2 cups water
  • 1 large mango, peeled and chopped
  • 1 cup raisins
  • 1 cup almonds, chopped

Orange Citrus Dressing

  • 1 large orange, zested and juiced
  • 1/4 cup olive oil
  • 1 tablespoon honey

Directions:

  1. Add the water and quinoa to a medium saucepan and bring to a boil.
  2. Cover, reduce heat to low and simmer for 15 minutes or until the water has been absorbed and the quinoa is nice and fluffy.
  3. Let the quinoa cool to room temperature.
  4. In a large bowl, combine the quinoa, mango, raisins and almonds.
  5. In a small bowl whisk together the orange juice, orange zest, olive oil and honey.
  6. Pour the dressing over the quinoa salad and mixed well.
