Crunchy Buffalo Chicken Salad

When it comes to chicken salads I have always preferred crispy chicken over grilled and this salad definitely has crispy chicken. It does not have a lot of spiciness from the hot sauce, so for those of you who do not like things super spicy you will still be able to enjoy this salad. 

This salad does not have a lot of dressing or bacon to it which was fine with me because it keeps the sodium levels down for my husband. Also, the original recipe called for buffalo wing sauce, but I always have Frank's Original Red Hot on hand so I just used that. Either way you can't go wrong.

Crunchy Buffalo Chicken Salad

Ingredients:

Crunchy Chicken

  • 2 boneless, skinless chicken breast, cut into pieces
  • 1/4 teaspoon black pepper
  • 1 egg white
  • 1 tablespoon Frank's Red Hot Sauce
  • 3/4 cup panko bread crumbs
  • 1/4 cup dry breadcrumbs
  • 3/4 tablespoon all purpose flour
  • 1/2 teaspoon onion powder

Salad

  • 1 heart of romaine lettuce, chopped
  • 1/2 cup carrots, shredded
  • 4 green onions, sliced
  • 4 slices turkey bacon, crumbled

Dressing

  • 6 tablespoons lite ranch dressing
  • 1 tablespoon Frank's Red Hot Sauce

Directions:

  1. Preheat oven to 425°F. Place cooling rack onto a cookie sheet and spray with cooking spray.
  2. In a shallow bowl whisk together the egg white and hot sauce.
  3. In another shallow bowl mix the panko breadcrumbs, onion powder, and flour.
  4. Season chicken with black pepper, dip into egg white mixture, then breadcrumb mixture pressing down to stick the breadcrumbs and finally place on the prepared rack.
  5. Lightly spray chicken with cooking spray and bake for 20-25 minutes.
  6. Place lettuce into bowls and top with carrots, green onions and bacon.
  7. Mix together the two dressing ingredients.
  8. When chicken is done place on top of salad and drizzle with dressing.
