Baked Spicy Turkey Meatballs: Savory Sweet and Satisfying

I am not sure how I did not find these meatballs spicy, with 1 1/4 teaspoons red pepper flakes I feel they should have been spicy. I would chalk it up to my higher than normal tolerance for spicy foods, but my girls did not find it spicy either and one of them do not like spicy foods. I guess next time I need to up the red pepper flakes.

Even though these meatballs were not spicy we certainly enjoyed them and looked forward to the leftovers. 

Baked Spicy Turkey Meatballs

Ingredients:

  • 6 cups vodka sauce
  • 1/4 yellow onion
  • 1 pound ground turkey
  • 2 cloves garlic, minced
  • 1 egg, lightly beaten
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 1/2 teaspoons chili powder
  • 1 1/4 teaspoons crushed red pepper flakes
  • 1 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 8 ounces spaghetti noodles
  • 8 ounces mozzarella cheese, shredded

Directions:

  1. Arrange the oven rack to the lower-middle position and preheat to high broil.
  2. Pour the sauce into a 9x13 inch baking dish. Spray a wire rack with cooking spray and place it on the baking dish.
  3. Grate the onion into a large bowl. Add in the chicken, garlic, egg, breadcrumbs, parmesan cheese, Italian seasoning, chili powder, red pepper flakes, paprika and black pepper. Using your hands, mix until everything is well combined.
  4. Using about 2 tablespoons of meat mixture, roll into a ball and place on top of the wire rack. Continue until all of t he meat mixture has been rolled into balls, about 15. Lightly spray the top of the meatballs with oil.
  5. Carefully place the baking dish with sauce and wire rack with meatballs into the oven and broil for 8-9 minutes or until the tops are golden brown. Remove from the oven and carefully flip the meatballs over and broil for an additional 2-3 minutes. Remove everything from the oven and reduce the oven temperature to 400º F.
  6. Carefully remove the wire rack from the baking dish. Stir the sauce and add the meatballs to the sauce. Cover the baking dish with aluminum foil and bake for 20 minutes or until the meatballs are completely cooked.
  7. Meanwhile, cook the pasta according to the package directions and drain well.
  8. Uncover the baking dish and sprinkle with mozzarella cheese. Bake for about 5 minutes or until the cheese has melted.
  9. Serve on top of the spaghetti noodles.
