This chicken was absolutely amazing. The creamy honey mustard sauce and the crunchy bacon paired so well together. It got rave reviews by all and I was even asked for a copy of the recipe. This was one chicken I was excited to have for leftovers.
Creamy Honey Mustard Chicken
Ingredients:
- 1/3 cup honey
- 3 level tablespoons whole grain mustard
- 1 1/2 tablespoons minced garlic
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- 1 1/2 cups half and half
- 1 teaspoon cornstarch
- 1 tablespoon water
- 3 ounce bag real bacon bits
Directions:
- In a large shallow dish, stir together the honey, mustard, garlic and oil.
- Coat the chicken breasts in the sauce.
- Heat a large nonstick skillet over medium heat. Add the chicken breasts and cook just until the chicken begins to brown, about 3 minutes. Flip the chicken over and cook on the other side just until it begins to brown, about 3 minutes.
- Add the remaining honey mustard sauce and the half and half to the skillet. Bring the mixture to a simmer, stirring occasionally and cook until the chicken is completely cooked, about 3 minutes. Remove the chicken and keep warm.
- Combine the cornstarch and water until well combined. Pour this mixture into the skillet and stir until the sauce has thickened.
- Place the chicken back in the skillet and coat both sides with the sauce. Top with the bacon bits.
