My mom makes a broccoli salad that is always a hit with the family. So when I came across this recipe that combined pasta and broccoli into a salad I knew I needed to make it. Not only does this salad comes together easily, but it makes a great side dish or a delicious light lunch.
Broccoli Pasta Salad
Ingredients:
- 16 ounces rotini pasta
- 1 cup light mayonnaise
- 1/4 cup red wine vinegar
- 1/4 cup granulated sugar
- 1/4 cup diced red onion
- 4 cups chopped broccoli florets
- 3/4 cup diced red pepper
- 1/2 cup unsalted shelled sunflower seeds
- 1/2 cup crumbled turkey bacon
Directions:
- Prepare pasta according to package directions and drain. Rinse with cold water and refrigerate until cold.
- In a small bowl whisk together the mayonnaise, red wine vinegar and sugar. Set aside.
- In a large bowl combine the cold pasta, broccoli, red pepper, sunflower seeds and bacon. Add in the dressing and toss to coat until well mixed.
- Cover pasta and refrigerate for at least 1 hour.
