Broccoli Pasta Salad

Broccoli Pasta Salad: Savory Sweet and Satisfying

My mom makes a broccoli salad that is always a hit with the family. So when I came across this recipe that combined pasta and broccoli into a salad I knew I needed to make it. Not only does this salad comes together easily, but it makes a great side dish or a delicious light lunch.

Broccoli Pasta Salad

Ingredients:

  • 16 ounces rotini pasta
  • 1 cup light mayonnaise
  • 1/4 cup red wine vinegar
  • 1/4 cup granulated sugar
  • 1/4 cup diced red onion
  • 4 cups chopped broccoli florets
  • 3/4 cup diced red pepper
  • 1/2 cup unsalted shelled sunflower seeds
  • 1/2 cup crumbled turkey bacon

Directions:

  1. Prepare pasta according to package directions and drain. Rinse with cold water and refrigerate until cold.
  2. In a small bowl whisk together the mayonnaise, red wine vinegar and sugar. Set aside.
  3. In a large bowl combine the cold pasta, broccoli, red pepper, sunflower seeds and bacon. Add in the dressing and toss to coat until well mixed.
  4. Cover pasta and refrigerate for at least 1 hour.
