Skinny Texas Cheese Fries

Skinny Texas Cheese Fries: Savory Sweet and Satisfying

Seasoned fries topped with melted cheese, bacon, green onions and a few jalapeños. Now that is a good way to enjoy a potato!

Skinny Texas Cheese Fries

Ingredients:

  • 4 medium russet potatoes, rinsed and patted dry
  • 4 teaspoons olive oil
  • 2 teaspoons paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • black pepper, to taste
  • 2/3 cup shredded cheddar cheese
  • 2 slices turkey bacon, cooked and crumbled
  • 1/4 cup diced green onions
  • 2 tablespoons diced pickled jalapeños

Directions:

  1. Preheat oven to 400º F. Lightly spray a baking sheet with cooking spray.
  2. Cut each potato in half lengthwise into 1/4 inch slices. Cut each slice into 1/4 inch pieces.
  3. In a large bowl combine the potatoes and olive oil well.
  4. Add in the paprika, chili powder, onion powder, garlic powder, cumin, and black pepper. Mix to coat the potatoes well.
  5. Place potatoes on prepared baking sheet in a single layer.
  6. Bake for 25 minutes or until crisp, turning once about halfway through cooking time.
  7. Remove the potatoes from oven and transfer to a baking dish.
  8. Top with cheese, bacon, green onions and jalapeños.
  9. Return to oven and bake for an additional 2 minutes or until the cheese is melted.
