Seasoned fries topped with melted cheese, bacon, green onions and a few jalapeños. Now that is a good way to enjoy a potato!
Skinny Texas Cheese Fries
Ingredients:
- 4 medium russet potatoes, rinsed and patted dry
- 4 teaspoons olive oil
- 2 teaspoons paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cumin
- black pepper, to taste
- 2/3 cup shredded cheddar cheese
- 2 slices turkey bacon, cooked and crumbled
- 1/4 cup diced green onions
- 2 tablespoons diced pickled jalapeños
Directions:
- Preheat oven to 400º F. Lightly spray a baking sheet with cooking spray.
- Cut each potato in half lengthwise into 1/4 inch slices. Cut each slice into 1/4 inch pieces.
- In a large bowl combine the potatoes and olive oil well.
- Add in the paprika, chili powder, onion powder, garlic powder, cumin, and black pepper. Mix to coat the potatoes well.
- Place potatoes on prepared baking sheet in a single layer.
- Bake for 25 minutes or until crisp, turning once about halfway through cooking time.
- Remove the potatoes from oven and transfer to a baking dish.
- Top with cheese, bacon, green onions and jalapeños.
- Return to oven and bake for an additional 2 minutes or until the cheese is melted.
