Spicy Chicken Fried Rice with Peanuts: Savory Sweet an Satisfying

This dish is spicy, sweet, crunchy and completely delicious. And the fact that it comes together fairly easily makes it even better.


Sometimes I have trouble finding fresh beans sprouts. In that case I use canned. I used the whole can, and drain ti well. I definitely recommend the fresh ones, but the canned variety will work.


Spicy Chicken Fried Rice with Peanuts

Ingredients:

  • 1/4 cup low sodium soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons canola oil
  • 2 chicken breasts, cut into bite sized pieces
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 1/3 cup unsalted, dry roasted peanuts, divided
  • 4 cups cooked white rice
  • 1/2 cup frozen peas
  • 1 cup fresh bean sprouts

Directions:

  1. In a small bowl whisk together the soy sauce, brown sugar, sesame oil and red pepper flakes. Set aside.
  2. Heat canola oil in a large nonstick skillet over medium high heat.
  3. Add chicken and cook until just cooked, stirring frequently.
  4. Add peppers and onion cooking for 3 minutes, while stirring, or until vegetables are tender.
  5. Add garlic and 3 tablespoons peanuts cooking for 1 minute, while stirring, until the garlic is fragrant.
  6. Stir in rice, peas and bean sprouts cooking until heated through.
  7. Add soy sauce mixture and cook for 2 minutes, stirring gently.
  8. Top each serving with remaining peanuts.
