This dish is spicy, sweet, crunchy and completely delicious. And the fact that it comes together fairly easily makes it even better.
Spicy Chicken Fried Rice with Peanuts
Ingredients:
- 1/4 cup low sodium soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes
- 2 tablespoons canola oil
- 2 chicken breasts, cut into bite sized pieces
- 1 red pepper, diced
- 1 yellow pepper, diced
- 1 white onion, diced
- 2 cloves garlic, minced
- 1/3 cup unsalted, dry roasted peanuts, divided
- 4 cups cooked white rice
- 1/2 cup frozen peas
- 1 cup fresh bean sprouts
Directions:
- In a small bowl whisk together the soy sauce, brown sugar, sesame oil and red pepper flakes. Set aside.
- Heat canola oil in a large nonstick skillet over medium high heat.
- Add chicken and cook until just cooked, stirring frequently.
- Add peppers and onion cooking for 3 minutes, while stirring, or until vegetables are tender.
- Add garlic and 3 tablespoons peanuts cooking for 1 minute, while stirring, until the garlic is fragrant.
- Stir in rice, peas and bean sprouts cooking until heated through.
- Add soy sauce mixture and cook for 2 minutes, stirring gently.
- Top each serving with remaining peanuts.
