Monterey Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon black pepper
  • 1/4 cup barbecue sauce
  • 1/4 cup turkey bacon, cooked and crumbled
  • 1 cup colby jack cheese, shredded
  • 14 ounce can Rotel tomatoes with green chilies, drained
  • sliced green onions

Directions:

  1. Pound the chicken just a little to give it a flat top and season with black pepper.
  2. Cook chicken in a large skillet until completely cooked.
  3. Top each chicken breast with 1 tablespoon barbecue sauce, 1/4 cup cheese, 1/4 cup tomatoes, 1 tablespoon bacon and a few green onions.
  4. Continue to cook until cheese is melted, about 5 minutes.
