This dish was creamy, flavorful and tasted just as good the next day. I love it when leftovers taste just as good as the day you made it!
Spicy Sausage Pasta
Ingredients:
- 1 tablespoon olive oil
 - 14 ounces smoked turkey sausage, sliced
 - 1 1/2 cups yellow onion, diced
 - 2 cloves garlic, minced
 - 2 cups low sodium chicken broth
 - 10 ounce can Ro-Tel diced tomatoes with green chilies
 - 1/2 cup whipping cream
 - 8 ounces penne pasta
 - 1/2 teaspoon black pepper
 - 1 cup Monterey Jack cheese, shredded
 - 1/3 cup green onions, sliced
 
Directions:
- Heat olive oil, over medium high heat, in an oven safe skillet.
 - Add sausage and onions, cooking until lightly browned, about 4 minutes.
 - Add garlic and cook until fragrant, about 30 seconds.
 - Add chicken broth, tomatoes, whipping cream, pasta and pepper, stir to combine.
 - Bring to a boil, cover and reduce heat to medium low.
 - Simmer for about 15 minutes or until the pasta is tender.
 - Remove skillet from heat and stir in 1/2 cup of cheese.
 - Top with remaining cheese and all of the green onions.
 - Place under broiler until cheese is melted and bubbly.
