This is my favorite kid of crock pot meal. Dump everything into the crock pot, set it and forget it. Normally with chicken crock pot meals I add in the chicken frozen. However, I've noticed lately the frozen chicken I buy, when defrosting I end up with a lot of liquid. Extra liquid is not a good thing in a dish like this. So, I would recommend using thawed chicken. But, if your sauce it too thin you can mix together cornstarch and water and stir it in and let it cook for about 30 minutes.
Crockpot Sweet Chili Chicken
Ingredients:
- 2 pounds boneless skinless chicken breasts
- 1 ounce packet ranch seasoning mix
- 20.75 ounces sweet chili sauce
- 8 ounces cream cheese
For Serving:
- cooked rice
Directions:
- Add the chicken to a crock pot and sprinkle the ranch seasoning over top and then pour the sweet chili sauce over top.
- Cut the cream cheese into big chunks and place on top.
- Cover the crock pot and cook on low for 4 1/2 hours or high for 3 1/2 hours.
- Remove the chicken from the crockpot and shred with two forks. Return the chicken to the crockpot and stir until the cream cheese is completely combined.
