I have always been a fan of tapioca, although, I don't make it often. I really need to make it more often especially after trying this caramel version. I never thought about making different flavored tapioca. I've just always bought the instant kind in a box and made it per the package directions. However, after trying a caramel version, I want to experiment with other flavors.
Caramel Tapioca
Ingredients:
- 2 3/4 cups whole milk
- 1/4 cup granulated sugar
- 3 tablespoons instant tapioca
- 1 egg, beaten
- 1/4 cup caramel sauce
- 1 teaspoon vanilla extract
Directions:
- In a medium saucepan, mix together the milk, sugar, tapioca, egg and caramel sauce. Allow to stand for 5 minutes.
- Cook over medium heat until the mixture comes to a full boil, stirring constantly. Remove from the heat and stir in the vanilla. Place plastic wrap directly on the surface of the pudding and allow to cool for 20 minutes. Stir the pudding and serve warm or transfer to a container and refrigerate until cold. Stir before serving.
