Pimento Grilled Cheese with Andouille Sausage: Savory Sweet and Satisfying

I wish I was more creative in the kitchen. I can follow a recipe without any troubles, even a poorly written recipe. I can even take a recipe and modify to fit my family tastes and needs. But creating a recipe from scratch is not something I feel confident about doing. I have a few recipes on this blog that I have created, but they are usually based off of similar recipes. 

This sandwich is quite the creation! Cajun sausage, pimento cheese and cheddar cheese, plus dill pickles all sandwiched between two slices of whole wheat bread. Talk about a filling and delicious lunch!

Pimento Grilled Cheese with Andouille Sausage

Ingredients:

  • 12 ounces smoked andouille sausage, sliced
  • 8 slices whole wheat bread
  • 4 tablespoons unsalted butter, melted
  • 1/2 cup pimento cheese
  • 2 ounces cheddar cheese, shredded, about 1/2 cup
  • sliced dill pickles

Directions:

  1. In a non-stick skillet, over medium-high heat, cook the sliced sausage until lightly browned, about 5-7 minutes.
  2. On all 8 slices of bread, spread melted butter on one side. Flip the bread over and spread on about 1 tablespoon pimento cheese to each slice. 
  3. On 4 of the slices, sprinkle on some cheddar cheese, about 2 tablespoons and desired amount of pickles and smoked sausage. Place the other 4 slices of bread on top, pimento cheese side down on top of the filling,
  4. Cook the sandwiches in a skillet or on griddle until the bread is golden brown, flip the sandwiches over and cook on the other side until the bread is golden brown and the cheese has melted.
Enjoy!!!

Notes:
You may not need all of the sausage.
