Stuffed Crust Pepperoni Pizza Bites: Savory Sweet and Satisfying

I am a huge fan of stuffed crust pizza. I love having extra cheese in the crust. These are essentially bite sized stuffed crust pieces with pepperoni on top. So delicious!

I used a homemade pizza dough to make these, but if you wanted an easier way to make them you could use store bought pizza dough, you just will not get as many pieces out of it. 

Stuffed Crust Pepperoni Pizza Bites

Ingredients:

  • 1 cup warm water (about 120º F)
  • 1 1/8 teaspoons active dry yeast
  • 1/2 tablespoon granulated sugar
  • 3 cups all purpose flour
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 16 string cheese sticks, cold
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 tablespoons grated parmesan cheese
  • 4 tablespoons unsalted butter, melted
  • 32 pepperoni

Directions:

  1. In a glass measuring cup, stir together the water, yeast and sugar.
  2. In the bowl of a stand mixer with the dough hook attached, add in the flour, oil and salt.
  3. Pour the water mixture over top and knead until a soft dough forms and is slightly tacky when touched, but does not stick to your fingers.
  4. Remove the dough from the bowl and place on a lightly floured surface.
  5. Roll the dough into a ball.
  6. Place the dough ball on a greased baking sheet and cover with a damp towel.
  7. Allow to rise at room temperature for 2-3 hours.
  8. Preheat oven to 425º F.
  9. Line a baking sheet with aluminum foil and spray with cooking spray.
  10. Cut each string cheese in half.
  11. In a small bowl combine the oregano, garlic and parmesan cheese.
  12. Divide the dough into 32 pieces and slightly flatten each piece.
  13. Place one piece of cheese in the middle of each dough piece and roll the dough up around the cheese tightly pinching the seams closed. Place on the prepared baking sheet.
  14. Brush each dough piece with melted butter and sprinkle with cheese and spice mixture.
  15. Press a pepperoni into the top of each dough piece.
  16. Bake for 10-12 minutes or until lightly browned.
  17. Serve with pizza sauce is desired.
