Mexican Breakfast Lasagna

Mexican Breakfast Lasagna: Savory Sweet and Satisfying

A layered breakfast casserole with a Mexican flavor. The nice thing about this casserole is that you have the option to prepare it the day before and then bake the following day, or you can prepare and bake on the same day. I choose to prepare and bake on the same day, but will give directions for preparing the night before and baking the following day.

Mexican Breakfast Lasagna: Savory Sweet and Satisfying

Mexican Breakfast Lasagna

Ingredients:
  • 12 eggs
  • 2 cups half and half
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 3 tomatoes, chopped
  • 1/4 cup diced yellow onion
  • 2 jalapeños, seeded and diced
  • 4 garlic cloves, minced
  • 12 corn tortillas
  • 16 ounces bacon, cooked and crumbled
  • 8 ounces pepper jack cheese, shredded
  • 8 ounces sharp cheddar cheese, shredded
Directions:
  1. Preheat the oven to 350º F. Spray a 9x13 inch baking dish with cooking spray.
  2. In a large bowl, whisk together the eggs and milk.
  3. Sprinkle the chili powder and cumin over the mixture while whisking to prevent clumps from forming. Keep whisking until the spices are completely combined.
  4. In a medium bowl, gently stir together the tomatoes, onions, jalapeños and garlic.
  5. Line the bottom of the prepared baking dish with 4 tortillas, overlapping if necessary.
  6. Top the tortillas with 1/4 of the tomato mixture, 1/4 of the bacon and 1/4 of each cheese. Repeat the layers 2 more times, starting with the tortillas and ending with the cheeses. You will have tomato mixture, bacon and cheese leftover for after the casserole bakes.
  7. Evenly pour the egg mixture over top of the casserole.
  8. Bake uncovered for 40-50 minutes or until the eggs are set.
  9. Turn the oven on to broil.
  10. Sprinkle the casserole with the remaining cheese and broil until the cheese is melted, about 2 minutes.
  11. Sprinkle the casserole with the remaining tomato mixture and bacon.
  12. Prepare the casserole and cover the baking dish with foil and refrigerate overnight.
  13. Remove the casserole from the refrigerator and allow sit at room temperature for 30 minutes before baking and continuing with the rest of the directions.
