It seems if I take chicken breasts and turn them into strips and then bread them and serve with dipping sauces my kids are very willing eat them up. I do not know if it is that they can dip them or eat them with their hands or the combination of the two, but I do not think I have made a chicken strip they have not liked.
Parmesan Crusted Chicken Tenders
Ingredients:
- 1/2 cup panko bread crumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon fresh ground black pepper
- 1/4 cup shredded parmesan cheese
- 2 eggs
- 1 pound boneless skinless chicken breasts
- 4 teaspoon olive oil
Directions:
- Preheat oven to 400º F. Place a wire cooling rack on a rimmed baking sheet. Spray the cooling rack with cooking spray. Set aside.
- In a shallow bowl whisk together the bread crumbs, garlic powder, onion powder, black pepper and parmesan cheese.
- In another shallow bowl whisk the eggs.
- Cut the chicken into strips and then working with one strip at a time dredge it into the egg, coating all sides. Then dredge the chicken strip into the bread crumbs pressing down to coat all sides well and place on a plate.
- In a large skillet heat 2 teaspoons olive oil over medium high heat. Add half of the breaded chicken strips and cook until golden brown on one side, about 3 minutes. Turn the chicken over and cook on the other side until golden brown, about 3 more minutes. Transfer to the prepared cooling rack. Add the remaining 2 teaspoon olive oil and repeat with the remaining chicken strips.
- Bake until the chicken strips are completely cook through about, about 5-10 minutes. Serve with your choice of dipping sauces.
