I think I am ready to give up getting my youngest to like rice. She used to like rice and then one day she decided she did not like it anymore. I have tried making it with some of her favorite ingredients, but nope she still does not like it. Oh well, at least the rest of the family enjoyed this rice, especially with the hot salsa that I used in it.
Queso Rice
Ingredients:
- 2 1/2 cups low sodium chicken broth
- 1 3/4 cups brown rice
- 1 can fiesta nacho cheese soup
- 1/2 cup salsa
- 1/4 cups cheddar cheese
Directions:
- Add the chicken broth and the rice to a medium pot and bring the mixture to a boil. Cover the pot and reduce the heat to low and simmer for 35-45 minutes or until most of the liquid has been absorbed.
- While the rice is cooking and towards the end of the cooking time, empty the can of soup (do not add any liquid to the soup) into a small pot and add the salsa. Heat over low heat, just until warmed through.
- Once the rice is done cooking and the soup and salsa has been heated add the soup mixture and the cheese to the rice and quickly stir to combine. Cover the pot and let sit for 5-10 minutes. Stir before serving.
