Cheesy Pepperoni Breadsticks


These breadsticks can either be cheesy pepperoni or just cheesy. If you prefer cheesy breadsticks just leave out the pepperoni. They are delicious either way, just depends on your preference or mood when you make them, or even what ingredients you have in the house.


Cheesy Pepperoni Breadsticks

Ingredients:

  • 4 1/2 cups bread flour
  • 1 1/2 cups warm water
  • 1/2 teaspoon salt
  • 1 teaspoon instant dry yeast
  • 1 1/2 tablespoons olive oil
  • 48 pepperoni slices
  • 12 string cheese sticks
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • marinara sauce

Directions:

  1. In the bowl of a stand mixer, fitted with the dough hook attachment, combine the bread flour, water, salt and yeast. Mix on low speed for 3 minutes.
  2. Add in the olive oil and increase the speed to medium and mix for 3 more minutes. If needed, add more flour 1 tablespoon at a time to get the right consistency. You want the dough to be tacky to the touch, but not stick to your fingers.
  3. Transfer the dough to an oiled bowl. Cover the bowl with a clean kitchen towel and let rise for 1 hour.
  4. Place the dough on a lightly floured surface and fold the dough several times, rotating it 90º after each fold. Return the dough back to the oiled bowl. Cover and let rise for 1 more hour.
  5. Transfer the dough to a lightly floured surface and fold 2-3 times. Cover with the clean kitchen and let rest for 10-15 minutes.
  6. Divide the dough into 12 equal pieces. Working with one piece of dough at a time roll it into a 2x5 inch rectangle. Keep the remaining dough pieces covered with the kitchen towel so they do not dry out.
  7. Place 4 slices of pepperoni down on the dough and place 1 piece of string cheese on top. Bring the dough up an around the string cheese and pinch together well. Roll the cheese stick a few times to flatten out the pinched seam.
  8. Place the breadstick down on a baking sheet lined with parchment paper or silpat. Repeat the process with the remaining pieces of dough.
  9. Cover the baking sheet with the clean kitchen towel and let rise for 30 minutes.
  10. Preheat the oven to 425º F.
  11. In a small bowl melt the butter. Add in the garlic powder and Italian seasoning. Mix until well combined. Brush the tops of the breadsticks with this mixture.
  12. Bake for 22-25 minutes or until the tops are golden brown.
  13. Serve with marinara sauce for dipping.
