Piña Colada Ice Cream with Strawberry Daiquiri Swirl

Pina Colada and Strawberry Daiquiri Ice Cream: Savory Sweet and Satisfying

One day I was looking for new ice cream recipes to add to my to try list and I came across one that mixed piña colada ice cream with a strawberry daiquiri swirl. I was instantly sold on the idea. I already had a delicious piña colada ice cream that I loved, so all I had to do was add the strawberry daiquiri swirl. What a fantastic combination that tasted amazing!

Piña Colada Ice Cream with Strawberry Daiquiri Swirl

Ingredients:

    Piña Colada Ice Cream

  • 2 cups heavy cream
  • 1 cup half and half
  • 1/2 cup granulated sugar
  • 1 cup crushed pineapple drained
  • 2 tablespoons drained pineapple juice
  • 1/2 cup sweetened coconut flakes
  • 1 teaspoon coconut extract
  • 1/2 teaspoon rum extract
  • Strawberry Daiquiri Swirl

  • 1 1/2 cups diced fresh strawberries
  • 1 tablespoon lime juice
  • 1/4 cup granulated sugar
  • 2 tablespoon rum
  • 3 tablespoon strawberry jam
  • 1 teaspoon cornstarch

Directions:

  1. Place freezer safe container, for storing the ice cream, in the freezer.
  2. In a large bowl combine the heavy cream, half and half and sugar. Stir until the sugar is completely dissolved.
  3. Add in the pineapple, pineapple juice, coconut, coconut extract and rum extract. Stir to combine.
  4. Pour mixture into an ice cream maker and churn according to manufacturer's directions.
  5. While the ice cream is churning prepare the strawberry daiquiri swirl by using a medium bowl to combine the strawberries, lime juice, sugar and rum.
  6. Use a masher or fork to mash the strawberries so they release some juice. Add in the strawberry jam and cornstarch, whisking to thicken the mixture.
  7. Remove storage container from freezer and transfer half of the ice cream into it.
  8. Pour the strawberry daiquiri swirl over top and place remaining ice cream on top.
  9. Use a knife to gently swirl the two together.
  10. Put the lid on the container and freeze.
Enjoy!!!

Notes:
You may use 1 teaspoon rum extract in place of the rum or leave it out completely.
