Marshmallow Bark

Marshmallow Bark:Savory Sweet and Satisfying

Super easy and super delicious marshmallow bark. Plus it only requires two ingredients, white chocolate chips and mini rainbow marshmallows.

I had originally made this for my kids knowing that they would love it. What I did not anticipate was how much my husband and I would love it. My kids like any and all flavors of marshmallows, where my husband and I only like the plain unflavored variety. But for some reason we loved this bark, probably was all of the delicious white chocolate the marshmallows were covered in.

Marshmallow Bark

Ingredients:

  • 12 ounces white chocolate chips
  • 3 cups mini rainbow marshmallows

Directions:

  1. Line a small cookie sheet with parchment paper.
  2. Measure out 3 cups marshmallows and set aside.
  3. In a microwave safe bowl melt the white chocolate chips for 1 minute. Stir the chocolate and return to the microwave in 30 second increments, stirring well after each time, until melted.
  4. Once the chocolate is completely melted, add in the marshmallows and quickly stir to coat them well in white chocolate. You need to do this quickly or the marshmallows will melt.
  5. Transfer the mixture to the prepared pan and spread into an even layer, pressing down lightly.
  6. Place in the freezer for about 20 minutes to harden the chocolate and stop the marshmallows from melting.
  7. Remove from the freezer and let sit on the counter until room temperature. Cut into bars.

Notes:
If you have trouble melted white chocolate without it seizing, add 1 tablespoon shortening before melting  the white chocolate.

White chocolate may not look melted when taking it out of the microwave, but if you it stir really good, for about 30 seconds, it will help prevent you from over heating it and having it seize on you.
