This dish comes together in just about 30 minutes, uses one pot and has a vegetable in it, making it a complete meal. There really was nothing not love about this dish. Came together quickly, not a lot of dishes to wash and tasted lemony good.
Lemon Chicken Orzo
Ingredients:
- 1 pound boneless skinless chicken breasts
- 1/2 teaspoon black pepper
- 14.5 ounces low sodium chicken broth
- 1/3 cup lemon juice
- 2 teaspoons honey
- 2 1/2 tablespoons light sour cream
- 2 cups water
- 3/4 cup orzo
- 8 ounces frozen green beans
Directions:
- Cut the chicken breasts into 1 inch pieces and season with 1/4 teaspoon black pepper.
- In a large pot add the chicken broth and lemon juice.
- Bring the mixture to a boil and add in the chicken breasts. Cover the pot, reduce the heat to low and cook for 9 minutes, or until the chicken is completely cooked.
- Remove the chicken from the pot with a slotted spoon and set aside.
- Increase the heat to high and cook the sauce uncovered for 5 minutes.
- To the sauce, stir in the remaining 1/4 teaspoon black pepper.
- Whisk in the honey and sour cream. Add in the water and bring the mixture to a boil.
- Add in the orzo and cook for 10 minutes or until the pasta is tender and most of the liquid has been absorbed.
- Add the green beans in durning the last 4 minutes of the pasta cook time.
- Stir the chicken back into the pot.
