Sometimes it is hard to please everyone in my family with one meal. But thankfully this one did. My oldest ate two of them for lunch and my youngest ate 1 1/2. They both wanted to make sure I would save some for them to have for lunch the next day. I have to admit my husband and I both ate two of them since they were so good. Next time I just may have to make a double batch so we have plenty of leftovers to enjoy on another day.
Parmesan Chicken Sandwich Melts
Ingredients:
- 3 cups cooked shredded chicken
- 1/2 cup plain greek yogurt
- 1/2 cup miracle whip
- 1 cup shredded parmesan cheese
- 8 ounces vegetable cream cheese
- 9 soft dinner rolls
Directions:
- Preheat oven to 350ยบ F.
- In a large bowl combine the chicken, yogurt, miracle whip, parmesan cheese until well mixed.
- Cut the dinner rolls in half and spread the top and bottom with the cream cheese.
- Evenly place the chicken mixture on the bottom half of the buns. Place top half of buns on top of the chicken mixture.
- Bake for 10 minutes, or until the chicken mixture is warmed through, cheese is melts and buns are starting to crisp.
