These mashed potatoes are deliciously easy. I also enjoy that the skins are left on the potatoes, since that is where a good portion of the potatoes nutrients are.
Cheesy Smashed Potatoes
Ingredients:
- 5 pounds yukon gold potatoes
- 1 cup light sour cream
- 3 cups shredded sharp white cheddar cheese
- 1/4 cup chopped green onions
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon cayenne pepper
Directions:
- Rinse potatoes and cut each potato into 4 pieces.
- Place potatoes into a large pot and cover with water.
- Bring to a boil and boil for 15 minutes or until potatoes are tender.
- Drain potatoes and return to pot. Smash potatoes.
- Add in sour cream and cheese, stir until cheese is melted and everything is combined.
- Add in green onions, nutmeg, and cayenne, stirring to mix.
