I really like baking my pizzas in cake pans. This way they come out in that perfect circle form that I can never seems to achieve without the help of a the pan. I just love seeing my pizzas in a perfect circle instead of my misshapen circle.
Three Cheese Pan Crust Pizza
Ingredients:
- 3/4 cup hot tap water
- 1 teaspoon active dry yeast
- 1 teaspoon granulated sugar
- 1 3/4 cup all purpose flour
- 1/2 teaspoon salt
- 2-3 teaspoons olive oil
- 1/4 cup- 1/2 cup pizza sauce
- 1 cup shredded extra sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- pepperoni slices
Directions:
- Measure the hot tap water in a glass measuring cup and then add in the yeast and sugar. Stir once to mix and let sit for 5-10 minutes.
- In the bowl of a stand mixer, with the dough hook attachment, combine the flour and salt.
- With mixer running on low, slowly add in the yeast mixture. Increase the speed to medium and add just enough olive oil until the dough comes together.
- Remove dough from the bowl and light grease the bowl. Return the dough to the bowl and cover with a clean kitchen towel and let rise until double in size, about 1-1 1/2 hours.
- Preheat oven to 500º F. Lightly grease 2- 9 inch round cake pans with olive oil.
- Divide dough in half and place in pans spreading and stretching to fill the bottom of the pan and about 1/4 inch up the sides. If dough does not strength well, let sit for a few minutes and then try again.
- Divide pizza sauce between the to pans and spread to cover the dough. Divide the cheeses between the two pans. Top with pepperoni.
- Bake for 12-14 minutes. or until cheese is melted and crust is golden brown.
