Southwest Egg and Tater Tot Casserole: Savory Sweet and Satisfying

I wish I knew why my kids disliked peppers so much. They did like the casserole, but picked out all of the peppers. Now why can't they put that much focus into cleaning their room and keeping it clean?

Southwest Egg and Tater Tot Casserole: Savory Sweet and Satisfying

This casserole is delicious and easy to make. But then again anything with tater tots and cheese is delicious right?

Southwest Egg and Tater Tot Casserole

Ingredients:

  • 2 tablespoons unsalted butter
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 12 eggs
  • black pepper, to taste
  • 1 1/2 cups shredded reduced fat cheddar cheese
  • 30 ounce bag tater tots

Directions:

  1. Preheat oven to 350º F. Spray a 9x13 baking dish with cooking spray. Set aside.
  2. In a large skillet, over medium heat, melt the butter. Sauté the onions and peppers for 5-7 minutes or until soft.
  3. In a large bowl whisk the eggs to break up the yolks. Season with black pepper.
  4. Add in the cooked veggies and 1 cup cheese, stir to combine. Pour into prepared baking dish.
  5. Place tater tots into the egg mixture and sprinkle with remaining cheese.
  6. Bake for 30-35 minutes or until the cheese is melted and eggs are completely cooked.
