During the cold winter months I love making soups. There is just something so comforting about a warm bowl of soup on a cold day.
This broccoli cheese soup is unique in that it has Swiss cheese in it along with the traditional cheddar. I never would of thought adding a little less cheddar and adding some Swiss would create a delicious bowl of broccoli cheese soup, but it did!
Broccoli Cheese Soup
Ingredients:
- 1 3/4 cups low sodium chicken broth
- 1 small onion, diced
- 1/3 cup all purpose flour
- 4 tablespoons unsalted butter
- 1/2 teaspoons black pepper
- 2 cups fat free milk
- 1 1/2 cups cheddar cheese, shredded
- 1/2 cup Swiss cheese, shredded
- 2 1/2 -3 cups broccoli florets, chopped
Directions:
- Place chicken broth and onion in a small saucepan, cover and simmer for 15-20 minutes or until the onion are tender.
- Meanwhile place broccoli in a large bowl and microwave for 3-4 minutes or until lightly steamed.
- Warm milk up in the microwave for 1-2 minutes.
- In a medium pot add in butter and melt over medium heat.
- Whisk in flour and black pepper; cook for 2 minutes whisking constantly.
- While still whisking add in warmed milk. Continue to whisk until the mixture thickens, about 5-8 minutes.
- Stir in warmed chicken broth with onions, both cheese and stir until smooth and melted.
- Stir in steamed broccoli.
