Savory Yogurt Chicken

We eat a lot of chicken in my family so I am always looking for new recipes. This one caught my eye because I already had all of the ingredients needed, and it was easy to prepare.

The whole family loved this chicken! It comes out super crispy and flavorful. The only downside to this chicken is it does not reheat well because the breading gets all soggy.

Savory Yogurt Chicken

Ingredients:

  • 1 cup bread crumbs
  • 2 tablespoons dried onion flakes
  • 1/4 teaspoon dried thyme
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 1 cup fat free Greek yogurt
  • 4 boneless skinless chicken breasts
  • 2 tablespoons unsalted butter, melted

Directions:

  1. Preheat oven to 375°. Place a cooling rack on a baking sheet and lightly spray the cooling rack with non stick spray.
  2. In a shallow dish combine the bread crumbs, onion flakes, thyme, Parmesan cheese, garlic powder, oregano, seasoned salt, and pepper.
  3. Place yogurt in a shallow dish.
  4. Rinse chicken and pat dry.
  5. Coat the chicken in yogurt and then coat well with the bread crumb mixture.
  6. Place chicken on prepared rack.
  7. Drizzle chicken with melted butter and bake uncovered for 45 to 55 minutes or until chicken is completely cooked.
