These potatoes are super easy to make. They do not take long to put together, they just take awhile to bake.
The result is soft creamy potatoes with a hint of ranch flavor and chili seasoning. Accented by some cheesy goodness. Definitely worth making.
Cheesy Ranch Potato Bake
Ingredients:
- 4 pounds russet potatoes skins on, cut into 1/4 inch cubes
- 1 tablespoon chili powder
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter, melted
- 1 1/2 cups Colby-Monterey Jack cheese blend, shredded
- 6 ounces lite ranch dressing
Directions:
- Preheat oven to 400°F. Lightly grease a 9x13 inch baking dish.
- Place potatoes in the prepared baking dish.
- Combine the butter, chili powder and black pepper.
- Pour over the potatoes and stir to coat the potatoes.
- Cover the baking dish with foil and bake for 1 hour or until the potatoes are tender.
- Remove from oven and remove foil.
- Mix in the ranch dressing and cheese, stirring to coat the potatoes.
- Bake, uncovered, for an additional 10 minutes.
