Chicken pot pie meets tater tot casserole. I have one daughter that likes tater to casserole and one who likes chicken pot pie. So I thought combining the two would be a good compromise and everyone would love dinner. Boy was I wrong! They didn't hate it, but they each would have rather had the "original" and not this combination. Oh well, it was still a good dinner and I enjoyed it.
Chicken pot pie usually takes a bit of work and so does this version. However, just like chicken pot pie the work is worth it. I might actually enjoy this tater tot version better than the pie crust version.
Chicken Pot Pie Tater Tot Casserole
Ingredients:
- 6 tablespoons unsalted butter, divided
- 2 pounds boneless skinless chicken breasts, cut into bite-size pieces
- 1 small yellow onion, diced
- 1 cup diced celery stalks, about 3
- 3 garlic cloves, minced
- 6 tablespoons all purpose flour
- 2 cups low sodium chicken broth
- 2 1/2 cups milk
- 1/2 teaspoon dried thyme
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
- 16 ounces frozen mixed vegetables
- 8 ounces cheddar cheese, shredded
- 32 ounces frozen tater tots
Directions:
- In a large pot over medium-high heat, melt 2 tablespoons butter. Add in the chicken and cook stirring occasionally for 7-10 minutes or until the chicken is completely cooked. Remove the chicken from the pot and set aside.
- Melt the remaining 4 tablespoons of butter in the pot. Add in the onions and celery and cook, stirring occasionally for 5-7 minutes or until tender. Add in the garlic and cook stirring constantly for 1 minute.
- Preheat the oven to 400ºF. Lightly spray a 9x13 inch baking dish with cooking spray.
- Sprinkle the flour over the vegetables and stir until well combined. Cook stirring constantly for 1 minute.
- While stirring, slowly pour in the chicken broth followed by the milk. Simmer over medium heat, stirring constantly for 5-7 minutes or until the mixture has thickened to a gravy consistency.
- Stir in the thyme, nutmeg and black pepper. Stir in the frozen vegetables and the cooked chicken.
- Transfer the mixture to the prepared baking dish. Sprinkle the cheddar cheese on top followed by the tater tots.
- Bake for 40-45 minutes or until hot and bubbly and the tater tots are golden and crispy.
