Peanut Butter, Chocolate and Fruit Quesadilla: Savory Sweet and Satisfying

This quesadilla makes a great special breakfast. They not only tastes really good, but I don't feel too guilty for eating them since they are filled with fruit, peanut butter and a little bit of chocolate.


The first time I made these I used frozen strawberries in place of the fresh and I ended up with a soggy mess. As the strawberries thawed in the oven it created extra moisture which caused the tortillas not to crisp up and created liquid oozing out of the tortillas and onto the baking sheet.

Peanut Butter, Chocolate and Fruit Quesadilla

Ingredients:

  • 4 tortillas
  • olive oil
  • 1/2 cup creamy peanut butter
  • 2 bananas, sliced
  • 7-10 strawberries, sliced
  • 1/4 cup dark chocolate chips
  • 4 teaspoons granulated sugar
  • 1 1/4 teaspoons ground cinnamon

Directions:

  1. Preheat the oven to 350ยบ F. Lightly spray a baking sheet with cooking spray.
  2. Brush one side of each tortilla with olive oil.
  3. Place two tortillas olive oil side down on the prepared baking sheet.
  4. Spread 1/4 cup of peanut butter on each tortilla.
  5. Place banana and strawberry slices on both tortillas.
  6. Sprinkle chocolate chips over top of the fruit.
  7. Place another tortilla on top of the chocolate chips, olive oil side facing up.
  8. Sprinkle 1/4 of the cinnamon sugar mixture on each tortilla.
  9. Bake for 7 minutes.
  10. Carefully flip the quesadillas over and sprinkle the remaining cinnamon sugar mixture on each tortilla.
  11. Bake for an additional 8 minutes or until the chocolate has melted and tortillas are starting to get crispy.
  12. Allow to cool for a few minutes before cutting.

Notes:
Frozen fruit will not work in place of the fresh fruit.

You can add more or less of the filling ingredients depending on your taste preferences.
