Parmesan Roasted Potatoes

Parmesan Roasted Potatoes: Savory Sweet and Satisfying

These potatoes are so very good and so very easy. They turn out soft on the inside with a crispy cheese bottom.

Parmesan Roasted Potatoes

Ingredients:

  • 3 tablespoons olive oil, divided
  • 1 1/2 cups grated parmesan cheese
  • 2 1/4 pounds honey gold potatoes, cut in half
  • black pepper, to taste

Directions:

  1. Preheat the oven to 400ยบ F.
  2. Brush 1 1/2 tablespoon olive oil on the bottom of an 10x15 inch baking sheet. Evenly sprinkle the parmesan cheese on top.
  3. In a large bowl, toss the cut potatoes with the remaining 1 1/2 tablespoons olive oil and black pepper.
  4. Press the cut side of the potatoes down into the parmesan cheese.
  5. Bake the potatoes for about 20-25 minutes or until they are tender and cheese is golden brown.
  6. Remove the baking sheet from the oven and let sit for 5 minutes before breaking apart and serving.

Notes:
You can use any size baking sheet, you will just need to adjust the amounts of the ingredients. You want the potatoes to fill the baking sheet.
