Homemade Freezer Yeast Rolls: Savory Sweet and Satisfying

I made these rolls, because I needed some for a breakfast recipe and wanted to use homemade versus store bought. I'm so glad I choose to make homemade rolls, not only did they work perfectly in the breakfast but I had more than enough to keep in the freezer to use as a dinner roll.

It is not often that I make dinner rolls. I am usually more focused on the main part of dinner and don't plan for rolls or biscuits. Plus making them from scratch takes time. But now that I have this recipe I can make a batch and have plenty of rolls on hand for whenever I want to make some without spending the time preparing the dough.

Fresh baked, soft and fluffy homemade dinner rolls just got a little bit easier.

Homemade Freezer Yeast Rolls

Ingredients:
  • 2 cups milk
  • 1/2 cup unsalted butter, cold
  • 4 1/2 teaspoons active dry yeast
  • 1/2 cup warm water
  • 1/4 cup + 1/2 teaspoon granulated sugar
  • 1 tablespoon salt
  • 3 eggs
  • 7 cups all purpose flour
  • melted butter
Directions:
  1. In a small saucepan, heat the milk over medium heat. As soon as the milk starts to boil, remove it from the heat.
  2. Place the cold butter into the hot milk and let the butter melt. Stir the mixture together and let cool until it is almost at room temperature.
  3. While the milk mixture cools, mix together the warm water, yeast and 1/2 teaspoon sugar. Let the mixture sit until the yeast gets bubbly.
  4. In the bowl of a stand mixer, pour in the room temperature milk mixture and the yeast mixture.
  5. Add in the remaining 1/4 cup sugar, salt and eggs. Mix until well combined.
  6. Add in 3 cups flour and mix briefly.
  7. Add in the remaining 4 cups of flour and mix on low until combined. The dough will be very sticky.
  8. Cover the bowl with a clean kitchen towel and let the dough rise until doubled in size about 1 hour. Punch the dough down and let rise for 1 more hour.
  9. Punch the dough down and turn the bough out onto a floured surface.
  10. Gently form the dough into a rectangle.
  11. Cut the dough into about 40 equal pieces.
  12. Form each piece into a ball and place on a baking sheet that is lined with a silpat or parchment paper.
  13. Place the baking sheet in the freezer and freeze the dough for 1 hour.
  14. Once the dough is frozen, place all of the dough balls into a sealable freeze bag. Keep the dough balls in the freezer until ready to bake.
  15. Pull out the desired number of frozen dough balls and place on a baking sheet that has been sprayed with cooking spray. Spray the tops of the dough balls with cooking spray and cover with plastic wrap.
  16. Let the dough rise until doubled in size, about 3-5 hours.
  17. Preheat the oven to 400ยบ F.
  18. Bake the rolls on the middle rack for 8-15 minutes or until the tops are golden brown.
  19. Once the rolls are done, immediately brush the tops with melted butter.
