I do not know what it is about tater tots, but my family and I love them. Anytime I see a recipe involving tater tots, I always check it out. There is just something so comforting and delicious about tater tots. Wether eating them for breakfast, lunch, dinner or even a snack my family gets excited seeing them in a meal.
The nice thing about this recipe is that you can prepare it the night before, minus the tater tots, cover and refrigerate it. Then the next morning top with tater tots and bake. This will save you time in the morning. Or you can prepare the whole thing in the morning if you choose.
Cheesy Tater Tot Breakfast Bake
Ingredients:
- 4 slices turkey bacon, cooked and crumbled
- 1 pound breakfast sausage roll
- 2 1/2 cups shredded sharp cheddar cheese
- 2 cups half and half
- 3 eggs
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon onion powder
- 2 pounds frozen tater tots
Directions:
- In a large skillet, over medium high heat, cook the sausage breaking it up into pieces. When completely cooked, drain any fat and place the sausage into a 9x13 baking dish, spreading into an even layer. Sprinkle 2 cups cheese over the sausage.
- In a large bowl whisk together the half and half, eggs, black pepper and onion powder. Pour over the cheese and sausage.
- If not baking right away cover and refrigerate overnight.
- When ready to bake, place the oven rack in the lower middle position, then preheat the oven to 350ยบ F.
- Top the casserole with the frozen tater tots and bake for 35 minutes.
- Remove from the oven and top with the remaining 1/2 cup shredded cheese and the cooked and crumbled bacon.
- Bake for an additional 5-10 minutes or until top is golden brown and sides of casserole are bubbling.
- Let sit for 10 minutes before cutting and serving.
