Jalapeño Popper Tater Tot Casserole : Savory Sweet and Satisfying

Tater tots meet the flavors of a jalapeño popper in the most delicious casserole ever. I had a strong feeling that this casserole was going to be pretty good. How could tater tots topped with a cheese and jalapeño mixture then topped with bacon not be good! But what I did not anticipate was just how amazingly delicious it would be. Even the leftovers were just as delicious as the day I made it.

Jalapeño Popper Tater Tot Casserole

Ingredients:

  • 2- 8 ounce packages reduced fat cream cheese, room temperature
  • 1 cup light sour cream
  • 2 cups shredded cheddar jack cheese, divided
  • 12 ounces turkey bacon
  • 6 jalapeño peppers, seeded and diced
  • 32 ounces frozen tater tots
  • 6 green onions, sliced

Directions:

  1. Preheat the oven to 425º F.
  2. Line a 9x13 baking dish with the frozen tater tots and bake for 15 minutes after the oven has preheated.
  3. Meanwhile, cook the bacon until crisp and then crumble.
  4. In a large bowl combine the cream cheese, sour cream, 1 1/2 cups shredded cheese, 2/3 of the bacon, diced jalapeños, 2/3 of the green onions. Mix until well combined.
  5. Spread the cheese and jalapeño mixture over the tater tots. Sprinkle the remaining 1/2 cup shredded cheese on top. Sprinkle the remaining bacon and green onions on top.
  6. Bake at 425º F for 20 minutes.
