Corned Beef Hash

Corned Beef Hash: Savory Sweet and Satisfying

Growing up I loved corned beef hash and requested it often. Over the years that love has never gone away, I just eat it a lot less often because the only kind I have ever had comes in a can and is most definitely not the healthiest thing to have for breakfast. So one day when I can across a recipe for making it myself I made immediate plans to make it.

This corned beef hash is a million times better than the stuff in a can! It is well worth the work that goes into it.

Corned Beef Hash

Ingredients:

  • 4 cups diced russet potatoes
  • 1 cup diced yellow onions
  • 3 cups finely chopped cooked corned beef
  • 5 tablespoons unsalted butter, divided
  • 1/4 teaspoon Worcestershire sauce
  • black pepper, to taste

Directions:

  1. Bring a pot of water to a boil.
  2. Rinse the potatoes and dice into 1/4 cubes.
  3. Add the potatoes to the boiling water and cook for 5 minutes.
  4. Drain the potatoes and rinse with cold water to stop the cooking process.
  5. In a large skillet melt 1 tablespoon butter over medium heat. Add in diced onions and sauté until softened.
  6. Add remaining 4 tablespoons of butter and melt.
  7. Add in the diced boiled potatoes and corned beef. Season with Worcestershire and black pepper.
  8. Cook corned beef hash until it gets nice and crispy, stirring and flipping often, about 20 minutes.
