Chicken Burrito Bowl with Creamy Chipotle Sauce: Savory Sweet and Satisfying

This Chicken Burrito Bowl is not only delicious, but it is filling too. Plus the whole meal is served in one convenient bowl. And then there is the Creamy Chipotle Sauce with just makes the whole meal even better and more delicious.

Chicken Burrito Bowl with Creamy Chipotle Sauce

Ingredients:

  • 1 1/2 cups rice
  • 2 boneless skinless chicken breasts
  • 1/2 cup salsa
  • 15 ounce can black beans, rinsed and drained
  • 3 roma tomatoes, diced
  • 1 1/2 cups frozen corn, thawed
  • romaine lettuce, chopped

Creamy Chipotle Sauce

  • 1/2 cup plain Greek yogurt
  • 1 chipotle in adobo sauce
  • 1/2 teaspoon adobo sauce(from can)
  • 2 cloves garlic
  • 1 tablespoon lemon juice

Directions:

  1. Cook the rice according to package directions.
  2. Cook the chicken your desired way until completely cooked.
  3. While the rice and chicken are cooking, prepare the sauce by adding all the ingredients to a blender.
  4. Blend until smooth and all the ingredients are well combined. Set aside.
  5. When the rice is done, mix in the salsa and divide evenly between 4 bowls.
  6. Cut the chicken into bite sized pieces, divide evenly between the 4 bowls and place on top of the rice.
  7. Divide the beans evenly and place on top of the chicken, followed by the tomatoes, then corn and then your desired amount of lettuce.
  8. Top each of the bowls with some of the creamy chipotle sauce.
