My girls do not like bell peppers of any color. They can even spot them in a dish no matter how small I dice them. I had hope that this dish would get them to eat a bell pepper, since the sauce looked similar to a pasta sauce.
One bite and my girls wanted to know what was in it. I asked them why and they said it was because they did not like it. So I told them it was made from red peppers and then informed me that is why they did not like it. Oh well, I tried. At least my husband and I liked it.
Pasta with Roasted Red Pepper Sauce
Ingredients:
- 3 whole red bell peppers
- 8 ounces penne pasta
- 2 tablespoons olive oil
- 1/2 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup shredded Parmesan cheese
Directions:
- Preheat oven to 400ยบ F. Line a baking sheet with foil.
- Place the peppers on the prepared baking sheet. Place the baking sheet in the oven and roast for 20 minutes.
- Turn the peppers over and roast for an additional 20 minutes, or until the skin is charred and peppers are soft.
- Remove peppers from the oven and immediately place in a heat proof container and place lid on top. Let the peppers sweat for 10 minutes.
- Remove the peppers from the container and peel off the charred skin and discard.
- Cut the peppers in half, remove the stem and seeds and discard.
- Place peppers in a blender or food processor and puree.
- While peppers are roasting prepare pasta according to package directions and drain.
- In a large skillet add the olive oil and heat over medium heat.
- Add in the onions and garlic and cook until soft, being careful to not let the garlic burn.
- Pour in the pureed peppers and stir.
- Pour in the cream and stir.
- Add in the pasta and stir to combine.
