The combination of barbecue sauce and ranch dressing is not one I would have ever thought of. So thankfully some else did, because it is a delicious combination. Add in some pasta, chicken, corn and of course cheese and you have a complete and comforting meal.
Barbecue Ranch Chicken Casserole
Ingredients
- 8 ounces rotini pasta
- 1 pound boneless skinless chicken breasts
- black pepper, to taste
- 3 Roma tomatoes, diced
- 1/3 cup diced red onion
- 1 cup frozen corn
- 1 1/2 cups light ranch dressing
- 3/4 cup barbecue sauce
- 2 1/2 cups shredded Monterey Jack cheese, divided
Cooking Directions
- Cook pasta according to package directions until just al dente. Drain and set aside.
- Season chicken with black pepper and cook desired way until completely cooked. Let cool a little bit and then cut into bite sized pieces.
- Preheat oven to 350ยบ F and lightly grease a 9x13 baking dish.
- In a large bowl, combine the diced tomatoes, diced onion, frozen corn, cooked pasta and chopped chicken until well mixed.
- In a small bowl whisk together the ranch dressing and barbecue sauce until well mixed. Add this mixture to the large bowl and stir to mix everything well.
- Add 1 1/2 cups cheese to the large bowl and mix well.
- Transfer mixture to the prepared baking dish and spread into an even layer. Sprinkle remaining 1 cup cheese over the top.
- Bake for 15-20 minutes or until everything is hot and cheese is melted.
