One of my mom's favorite treats has always been a Hostess Sno Ball. She never ate them much, but would never turn one down if someone bought it for her. So when my parents came for a visit I knew I needed to make this dessert for her.
Snoball Brownies
Ingredients:
- 8 tablespoons unsalted butter, melted
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2/3 cup all purpose flour
- 3 (1.55 ounce) milk chocolate bars, melted
- 7 ounce jar marshmallow fluff or creme
- 2/3 cup sweetened, shredded coconut
- red or pink food coloring
- 1 tablespoon cornstarch
Directions:
- Preheat oven to 350ยบ F. Line an 8x8 square baking pan with foil and spray foil with baking spray. Set aside.
- In a large bowl, whisk together the butter and cocoa powder until the cocoa powder is dissolved and mixture is thick.
- Add in the sugar and stir until combined.
- Add in the eggs and stir until combined. Stir in the vanilla.
- Add in the flour, stirring just until combined.
- Fold in the melted chocolate bars.
- Pour the batter into the prepared baking pan and spread into an even layer.
- Bake for 25 minutes or until an inserted toothpick comes out with a few crumbs, but no raw batter.
- Let cool for 20 minutes.
- While the brownies are cooling, in a food processor or blender, combine coconut, cornstarch and 1 drop of red or pink food coloring. Pulse until coconut is finely shredded and pink in color.
- Spread the marshmallow fluff or creme over the brownies.
- Sprinkle the coconut over the marshmallow fluff or creme and press gently with your hands.
- Cover and refrigerate until brownies are cooled and firm.
- Store any remaining brownies in the refrigerator.
