Caramel Banana Muffins

Caramel Banana Muffins: Savory Sweet and Satisfying

If you like banana bread then you will love these muffins. They taste just like banana bread, but in a convenient muffin. The sweet caramel icing takes these muffins to the next level making them oh so delicious.

Caramel Banana Muffins

Ingredients:

  • 1/4 cup vegetable shortening
  • 1 cup granulated sugar
  • 1 egg
  • 1 1/2 cups mashed bananas (about 3 large)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 tablespoons unsalted butter
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon milk
  • 1/2 cup confectioners' sugar

Directions:

  1. Preheat oven to 350ยบ F. Spray a muffin tin with cooking spray.
  2. In a large bowl cream together the shortening and sugar until light and fluffy.
  3. Beat in the egg until combined.
  4. Beat in the mashed bananas and vanilla.
  5. In another large bowl combine the flour and baking soda.
  6. Slowly mix the flour mixture into the creamed mixture until just combined.
  7. Fill muffin tin 3/4 full with batter.
  8. Bake for 18-25 minutes or until an inserted toothpick comes out clean.
  9. Cool for five minutes in muffin tin. Transfer muffins to a wire rack to cool completely.
  10. While the muffins are cooing make icing by melting butter in a small saucepan over medium heat.
  11. Stir in the brown sugar and milk. Bring mixture to a boil stirring constantly.
  12. Once the mixture reaches a boil remove from heat and cool slightly.
  13. Mix in confectioners' sugar until smooth.
  14. Spread caramel icing over the cooled muffins.
