Taco salad has always been a favorite of mine. When I first started making it I took my mom's recipe and adjusted it a bit. Below you will find what I use in it but not how much of each item. I tend to let each family member choose how much of each item they want in their salad.
Growing up mom used to make a dressing of 1 part Thousand Island Dressing to 1 part taco sauce, which is really good. Sometimes I use that and sometimes I just top my salad with salsa and sour cream. Just depends on my mood and if I need to use up any sour cream.
One thing that made my mom's taco salad special was the addition of crushed Doritos. Growing up chips of any kind were not a regular in the house so I really enjoyed taco salad night.
You can use any flavor of Doritos that you like. My mom uses regular nacho cheese, my family prefers a spicier variety of Doritos. Whatever kind you choose, it is sure to make your taco even more delicious.
Taco Salad with Taco Shell
Ingredients:
- tortillas
- romaine lettuce
- cooked ground turkey seasoned with taco seasoning
- kidney beans, rinsed and drained
- chopped tomatoes
- shredded cheddar cheese
- crushed Doritos, any flavor
- dressing of your choice (see above for what I use)
- To make the taco shell preheat the oven to 425ยบ F.
- Crumble a large piece of foil to make a 3 inch ball. Place the foil ball on a baking sheet, place a tortilla over it and spray the tortilla with cooking spray.
- Bake for 6-8 minutes or until tortilla is golden brown. The tortilla will drape over the foil ball as it cooks.
- Add all of the taco salad ingredients to the taco shell and top with crushed Doritos and dressing.
