Spinach Pasta Salad

Spinach Pasta Salad: Savory Sweet and Satisfying

This salad is so yummy. My husband and I could not get enough of it, in fact we even ate by itself for lunch. I also think my husband took it to work for dinner one night when he had to work late.

Whether you eat for lunch or dinner as a side or main dish it will be delicious!

Spinach Pasta Salad

Ingredients:

  • 16 ounces package bow tie pasta
  • 6 ounces craisins
  • 3- 11 ounce cans mandarin oranges, drained
  • 1/2 cup fresh parsley, chopped
  • 1 bunch green onions, chopped
  • 6 ounces honey roasted peanuts, roughly chopped
  • 10 ounces bag spinach, roughly chopped

Dressing

  • 1 cup canola oil
  • 2/3 cup teriyaki sauce
  • 2/3 cup white wine vinegar
  • 6 tablespoons granulated sugar
  • 1/2 teaspoon black pepper

Directions:

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a small bowl whisk together all of the ingredients for the dressing.
  3. Add drained pasta to a large bowl and pour dressing over top, mixing to combine.
  4. Refrigerate for 2 hours.
  5. After 2 hours, remove from refrigerator and stir.
  6. Add in the craisins, mandarin oranges, parsley, green onions, honey roasted peanuts and spinach, stir to combine.
  7. Serve immediately.
