This salad is so yummy. My husband and I could not get enough of it, in fact we even ate by itself for lunch. I also think my husband took it to work for dinner one night when he had to work late.
Whether you eat for lunch or dinner as a side or main dish it will be delicious!
Spinach Pasta Salad
Ingredients:
- 16 ounces package bow tie pasta
- 6 ounces craisins
- 3- 11 ounce cans mandarin oranges, drained
- 1/2 cup fresh parsley, chopped
- 1 bunch green onions, chopped
- 6 ounces honey roasted peanuts, roughly chopped
- 10 ounces bag spinach, roughly chopped
Dressing
- 1 cup canola oil
- 2/3 cup teriyaki sauce
- 2/3 cup white wine vinegar
- 6 tablespoons granulated sugar
- 1/2 teaspoon black pepper
Directions:
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a small bowl whisk together all of the ingredients for the dressing.
- Add drained pasta to a large bowl and pour dressing over top, mixing to combine.
- Refrigerate for 2 hours.
- After 2 hours, remove from refrigerator and stir.
- Add in the craisins, mandarin oranges, parsley, green onions, honey roasted peanuts and spinach, stir to combine.
- Serve immediately.
