I love this salad! We eat a lot of salads in our house and this salad ranks somewhere in my top 5. It is so easy prepare and just tastes delicious.
Raspberry Spinach Salad
Ingredients:
- 9 cups spinach
- 3 cups fresh or frozen raspberries, thawed
- 2 tablespoons olive oil
- 2 tablespoons cider vinegar
- 4 teaspoons granulated sugar
- dash black pepper
Directions:
- In a large bowl gently combine the spinach and 2 3/4 cups raspberries.
- In a small bowl mash the remaining raspberries. Strain the berries reserving the juice and discarding the seeds.
- Whisk together the raspberry juice, olive oil, vinegar, sugar and pepper. Drizzle over salad and gently toss to coat.
