Chinese Chicken Salad

Chinese Chicken Salad: Savory Sweet and Satisfying

My husband likes salads but not always as the main dish for dinner, because they typically do not fill him up. However, I have found a large and filling salad for dinner that satisfied my husband. Not only was it large and filling, but it was pretty delicious as well.

Chinese Chicken Salad

Ingredients:

  • 2 boneless skinless chicken breasts
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons olive oil
  • 1 head romaine lettuce, chopped
  • 4 cups chopped red cabbage
  • 8 ounce bag frozen edamame, thawed and drained
  • 2/3 cup shredded carrots
  • 1/2 cup chow mein noodles
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup olive oil
  • 3 tablespoons honey
  • 2 tablespoons rice wine vinegar
  • 1 teaspoon ground ginger
  • 1 tablespoon low sodium soy sauce
  • 1 clove garlic, minced
  • 2 teaspoons sriracha chile sauce
  • 1 teaspoon sesame oil

Directions:

  1. In a large bowl or resealable bag, combine the soy sauce and rice wine vinegar.
  2. Add in the chicken breasts and coat with sauce. Put chicken in the refrigerator and marinate for at least 15 minutes.
  3. Heat a medium skillet over medium-high heat and add chicken along with marinade. Cook chicken for 3-5 minutes per side or until chicken is completely cooked.
  4. Let the chicken rest for a few minutes and then cut into bite sized pieces.
  5. In a small bowl whisk together all of the dressing ingredients.
  6. In a large bowl combine the lettuce, cabbage, edamame, carrots, chicken, chow mein noodles and almonds.
  7. Pour dressing over top and toss to combine.
