Butter Pecan Ice Cream

Butter Pecan Ice Cream: Savory Sweet and Satisfying

I do not care for butter pecan anything. However, just like with my Toasted Butter Pecan Cake I posted a while back, I made this for my dad who's favorite ice cream is butter pecan.

I was surprised with the turn out of this ice cream. Now don't get me wrong this is far from my favorite ice cream, but it is a good ice cream. Very creamy and flavorful. Perfect for any butter pecan lovers out there.

Butter Pecan Ice Cream

Ingredients:

  • 6 tablespoons unsalted butter
  • 1 cup chopped pecans
  • 1 cup half and half
  • 1/2 cup light brown sugar
  • 2 cups heavy cream
  • 1 1/2 teaspoons vanilla extract

Directions:

  1. Place a mesh sieve over a small bowl and set aside.
  2. Place freezer safe container, for storing the ice cream, in the freezer.
  3. In a small saucepan, over low heat, melt butter. Mix in pecans, stirring until pecans start to brown.
  4. Pour the pecans and butter into the mesh sieve and let the butter drain into the bowl. Set aside and let butter and pecans cool completely.
  5. In a large bowl combine the half and half and brown sugar, stirring until the sugar is dissolved.
  6. Stir in the heavy cream, vanilla and cooled butter melted butter.
  7. Pour mixture into an ice cream maker and churn according to manufacturer's directions. During the last 5 minutes of churning time add the cooled buttered pecans.
  8. Remove storage container from the freezer and transfer ice cream into it. Cover with lid and freeze.
